Once the
ageing has finished and the right coupage was done, the whole batch
of wine of the same vintage is blended before bottling and then
it is kept during several weeks in stainless steel vats, without
cold stabilization but clarifying with pure egg white albumin,
so that all kind of impurities were removed from the wine.
Finally, the wine is filtered through fine sheets of 0,5 microns
before it is bottled. For our wines we only use natural cork as a
closure.
